What is the best Japanese vinegar? Our 2026 comparison

Japanese vinegar is nothing like European vinegars. Rounder, less aggressive, often aged in jars or barrels for years, it is a pillar of traditional Japanese cuisine. Here is our buying guide to help you choose the right one.

1. Kurozu Vinegar, Kakuida's Black King

Kurozu (黒酢) is a brown rice vinegar aged in earthenware jars for 3, 5, or 10 years in Fukuyama, Japan. A legendary vintage from the Kakuida house, it is the Japanese vinegar most prized by Michelin-starred chefs.

  • Taste: deep, almost sweet, notes of plum and leather
  • Usage: seasoning, deglazing meats, umami shot to drink neat
  • Price: 50-260 € depending on aging

2. Yuzu Vinegar, Tangy and floral

Made from the Japanese citrus fruit yuzu, this vinegar provides a fresh and fragrant acidity, ideal for sashimis and marinades.

  • Taste: tangy, floral, citrusy
  • Usage: Asian vinaigrettes, fish marinades
  • Price: 12-25 €

3. Ponzu Vinegar, The signature sauce

A blend of rice vinegar, soy sauce, citrus, and katsuobushi, Ponzu is the most versatile Japanese seasoning.

  • Taste: umami, salty-tangy
  • Usage: sashimi, tataki, dipping sauce, salads
  • Price: 8-18 €

4. Komesu White Rice Vinegar, The base

The most widely used vinegar in Japan, essential for sushi rice.

  • Taste: mild, slightly sweet
  • Usage: sushi rice, mild vinaigrettes
  • Price: 4-12 €

5. Marusho Organic Brown Rice Vinegar

Slow fermentation from 90 to 500 days in Japanese cedar barrels. Artisan production by the Kosaka family.
