Tuna tataki is one of the most elegant and accessible Japanese preparations. This recipe combines the freshness of briefly seared raw tuna with the crunch of sesame seeds and the subtle acidity of ponzu sauce.
Ingredients
- 400g sashimi-grade tuna
- 3 tablespoons sesame seeds (white and black)
- 2 tablespoons soy sauce
- Juice of one yuzu (or lime)
- 1 tablespoon mirin
- Fresh grated ginger
- Chopped Japanese chives
Preparation
Coat the tuna steak with sesame seeds, pressing firmly. Heat a pan over very high heat with a drizzle of sesame oil. Sear the tuna for 30 seconds on each side — the inside should remain raw.
Prepare the ponzu sauce: mix soy sauce, lemon juice, mirin, and grated ginger. Slice the tuna into thin strips and arrange on a platter. Drizzle with ponzu sauce and sprinkle with chives.
