Tataki Preparation

Remove the bonito block from the refrigerator 30 minutes before cooking to allow it to reach a slightly warmer ambient temperature (improves the Maillard reaction). Season the surface of the fish by sprinkling generously with sea salt and spices. Wait 10 minutes for the salt to form a protective superficial crust. Prepare a grill or cast iron griddle at very high temperature (until smoking). The grill must be extremely hot: the key to tataki lies in an ultra-short cooking time. Place the bonito block directly on the grill. Sear for 45 seconds to 1 minute MAXIMUM per side (4 sides: top, bottom, two sides). The surface should turn golden-brown while the center remains raw. Remove immediately and plunge into a very cold ice bath (water + ice cubes) to stop cooking. This thermal shock freezes the crust while keeping the interior raw. Let cool for 5 minutes. Slice into 1cm thick slices, perpendicular to the fibers. Each slice should show a contrast: a golden-brown surface and a bright red center (characteristic of bonito tataki).
