The Bigorre black pig is a purebred native pig, present in the central Pyrenees since time immemorial. Recognizable by its black coat and horizontal ears, it lives freely in its original territory, Bigorre, on the borders of the Hautes-Pyrénées, Gers, and Haute-Garonne departments, at the foot of the mountains, in a landscape of meadows and undergrowth. Too fatty, too slow, too unproductive, and ill-suited to intensive farming and industrial standards, it had become an archaic, useless animal. The Bigorre black pig is now being revived thanks to the tireless work of the Padouen collective and thanks to the exceptional flavor of its fat! It produces very high-quality fat, due to a significant amount of oleic and linoleic fatty acids. These beneficial fats offer numerous physiological advantages: they lower cholesterol, help prevent cardiovascular disease, and support the immune system. To preserve its original qualities, the breeders make no compromises on its rearing conditions. Its exceptional meat is red, tender, juicy, and intensely flavorful. Traditional in Bigorre, the preservation of the hams by air-drying benefits from a microclimate alternating between humid and dry phases, which gives them their distinctive character.
