Wakame is not just a seaweed. It's a state of mind. Hand-picked between January and April in the icy waters of northeastern Japan, it transforms a simple miso soup into a maritime journey. Its texture is firm, its taste salty, its umami note complete.

Wakame is harvested during the three coldest months of the year. Fishermen go out to sea as early as 4 am, dive 5-8 meters, and cut the seaweed at its base. Each knife stroke must preserve the rhizome — otherwise the seaweed will not grow back the following year.

The seaweed is then blanched for 30 seconds in boiling water, then salted for preservation. This technique, dating back to the Edo era, fixes the intense green color and crisp texture. Once rehydrated, wakame regains its marine suppleness in 5 minutes.

The origin

The Sanriku coast in Iwate is unique. The warm Kuroshio currents meet the cold Oyashio waters precisely at this point. This turbulent zone creates ideal conditions for wakame: mineral-rich water, abundant plankton, constant currents that aerate the seaweed.

The 2011 tsunami devastated the industry. Today, ten years later, fishermen have rebuilt their ports and farms. Sanriku wakame has returned, rarer but more intense.

The use

Pour a handful of dehydrated wakame into 200 ml of cold water. Wait 5 minutes. The seaweed unfolds like a flower, swells, and regains its color. Drain, press lightly.

Wakame is the invisible ingredient in miso soups, sunomono salads (with cucumber, rice vinegar), and dashi broths. But also try it as a garnish on raw fish, or pressed into beef tartare — it transforms the meat.

Tasting notes

Appearance: Deep green, almost emerald. Lustrous, almost waxed texture.

Nose: Iodine, low tide, fresh butter.

Palate: Crunchy on the surface, melting in the heart. Direct salinity then a long umami.

Finish: Lingers on the palate for at least 30 seconds. Final mineral note.
