Japan places great importance on the traceability of beef. Cattle farmers are required to assign a ten-digit identification number to each bovine as part of a certification system administered by a government agency. Consumers can therefore know the origin and journey of the product and choose their meat with confidence.
Beyond this, certain farmers are deeply meticulous in their pursuit of the highest quality. They ensure their cattle are examined daily by a veterinarian, record data on the physical condition and growth of the animals in a health book, and link this information to the animal's identification number — so consumers can be assured of the reliability of their products.
