IGP Balsamic Vinegar of Modena: Buyer's Guide (PDO, IGP, Fake Balsamic Vinegars)
PDO, PGI, fake balsamics: everything you need to know before buying an authentic Balsamic Vinegar of Modena. Expert guide from FOODHUB, 48h delivery.

You want to buy a true balsamic vinegar, not just colored caramel sold in supermarkets. But with IGP, DOP, Aceto Balsamico Tradizionale, and hundreds of confusing labels, how do you know what to choose? Here's the complete guide.
The real question: what is a real balsamic?
An authentic balsamic vinegar is not wine vinegar. Nor is it sugary syrup. It's a product made from cooked grape must (not wine), fermented and aged in wooden barrels, a process that can take from 60 days to 25 years depending on the category.
3 official categories to know:
- Aceto Balsamico Tradizionale DOP (Modena or Reggio Emilia), the absolute elite
- Aceto Balsamico di Modena IGP, the accessible premium standard
- Condimento Balsamico, with no protected designation, variable quality
If a bottle doesn't bear either DOP or IGP, it's not authentic balsamic; it's a condiment that may contain caramel, colorings, and added sugars.
DOP vs IGP: the difference in 5 minutes
Aceto Balsamico Tradizionale DOP (the elite)
DOP = Denominazione di Origine Protetta (Protected Designation of Origin). This is the strictest category.
- Production: exclusively in Modena or Reggio Emilia, from Trebbiano or Lambrusco grape must slowly cooked over low heat
- Aging: minimum 12 years in a battery of barrels (oak, chestnut, cherry, mulberry, ash, black locust), no additives allowed
- Mentions: Affinato (12 years) or Extra Vecchio (25 years minimum)
- Packaging: official 100 ml bottle only, sealed and numbered by the consortium
- Price: €50 to €200 for 100 ml
This is a tasting product, to be used in drops on Parmesan, strawberries, or ice cream. Not for salad dressing.
Aceto Balsamico di Modena IGP (the premium standard)
IGP = Indicazione Geografica Protetta (Protected Geographical Indication). A more accessible category, but still regulated.
- Production: in Modena or Reggio Emilia, from cooked grape must + wine vinegar (minimum 10%)
- Aging: minimum 60 days in wooden barrels, up to several years for the best ones
- Mentions: Invecchiato for 3+ years
- Packaging: flexible (250 ml, 500 ml, etc.)
- Price: €8 to €50 depending on aging and producer
This is the premium everyday balsamic. Ideal for vinaigrettes, marinades, and finishing hot dishes.

How to read a balsamic vinegar label
Before buying, check the label in this order:
1. DOP or IGP mention
Without one of these two visible mentions, it's not a regulated balsamic. No mention = skip it.
2. Ingredient list
An authentic IGP balsamic contains:
- Cooked grape must (the earlier in the list = the better)
- Wine vinegar
- (Optional) Caramel E150d, limited to 2%
Red flags:
- Glucose, fructose, added sugar: diluted product
- Added flavors: industrialization
- Colorings other than caramel: fake balsamic
- Preservatives (excess sulfites, sorbate): unstable product
3. Aging indication
- Invecchiato = minimum 3 years
- Riserva / Extra Vecchio = much more
4. Density
A quality IGP balsamic has a medium viscosity; it pours but doesn't run like water. Too liquid = young. Too syrupy = caramel.
Supermarket traps: common fake balsalmic vinegars
Modena Balsamic Vinegar without IGP
Some brands use the term Modena balsamic vinegar without having the IGP label. This is legal (the geographical mention is not exclusive if only the raw material comes from the area), but misleading.
→ Always check for the official IGP logo (yellow and blue European flag with mention).
Balsamic cream or glaze
These are thick sauces made from reduced balsamic + sugars + starch. Convenient for cooking, but they are not pure balsamic vinegars. Reserve them for visual garnishes.
Flavored balsamic (strawberry, fig, truffle)
Often low-quality balsamic vinegars flavored to mask an inferior product. If you want a strawberry balsamic, make it yourself: 100g of blended strawberries + 10cl of reduced IGP balsamic.
How to use balsamic in cooking
In vinaigrette
1 tablespoon IGP + 3 tablespoons olive oil + salt + pepper. No mustard, let the balsamic express its profile.
Homemade reduction
50 ml IGP in a saucepan, low heat 8-10 minutes until syrupy consistency. Cools into a perfect glaze for duck breast, foie gras, Parmesan.
Marinades
For red meats and game: 2 cl balsamic + 5 cl olive oil + garlic + thyme. Minimum 2 hours, up to 24 hours for game.
As a finishing touch
A few drops on:
- Mozzarella di bufala + beefsteak tomatoes
- Beef carpaccio
- Porcini mushroom risotto
- Burrata + fig
- Vanilla ice cream + strawberries (yes, really)
Pure tasting (DOP only)
By the spoon, at room temperature. Aromatic profile: plum, dried red fruits, precious wood, long woody finish.

FAQ: frequently asked questions
How long does balsamic vinegar keep after opening?
Very long. Away from light and at room temperature: 3-5 years for an IGP, indefinitely for a DOP. Natural acidity is an effective preservative.
Should balsamic vinegar be refrigerated?
No. Cold alters its complex aromas. Store it in a cupboard, upright, away from light.
What is the difference between white and dark balsamic?
White balsamic (condimento bianco) is not a true IGP balsamic. It's a blend of white grape must + vinegar. Milder, less complex. Good for cooking fish and carpaccio without coloring the dish.
Is balsamic vinegar vegan?
Yes, it is a 100% plant-based product (grape + wine vinegar). No animal products are used in traditional production.
How many calories in balsamic?
Approximately 90 kcal per 100 ml (primarily natural sugars from the must). In cooking, it's used by the spoon, which is about ~15 kcal per tablespoon. Much less than maple syrup.
Does balsamic make you gain weight?
No, when used in normal cooking (1-2 spoons/person). Its natural acidity even aids digestion and sugar metabolism after a meal.
In summary
A true balsamic is recognized by 3 mentions on the label: DOP (elite), IGP (premium standard), or nothing (avoid). Read the ingredients: cooked grape must first, few or no additives. Check the format and price; a Modena balsamic at €3 for 50cl is by definition tampered with.
For 95% of cooking uses: a quality IGP Modena (€8-€25 for 250 ml) covers vinaigrettes, marinades, finishing, and reductions. DOP is for special occasions and connoisseurs.
And most importantly, good balsamic should be enjoyed without rushing. A drop on a 24-month aged Parmesan, a ripe strawberry, or simply a spoon in your mouth to understand why Italy has been talking about it for 1000 years.
