Kurozu does not have the aggressiveness of vinegar. It has the roundness of a sweet wine, the depth of balsamic, the complexity of a mature sake. It is a brown rice vinegar that naturally ferments for two years in ceramic jars, exposed to the sun and wind of the coast.

Kurozu is born in Kagoshima, on the volcanic island of Kyushu. The region has a subtropical climate, regular rainfall, and mild temperatures all year round. Ideal conditions for the slow fermentation of vinegar.

The method is unique: steamed brown rice, mixed with spring water and koji (Aspergillus oryzae), placed in 200-liter ceramic amphorae. The jars remain outdoors for 1 to 3 years. Fermentation is driven by local wild yeasts — different from one jar to another.

The origin

The village of Fukuyama, in Kagoshima, is the epicenter of kurozu. Three hundred jars aligned on the terraces, facing south, guarded by artisans for 200 years. The landscape is listed as a Japanese heritage site.

Each jar has its own history. The oldest are 80 years old. They house microorganisms that no laboratory can reproduce. When a jar cracks, it is resealed with clay, never replaced — its living flora is irreplaceable.

Usage

Its use

Kurozu is drunk as a digestif, diluted (1 spoon for 200 ml of water). In Japan, it is consumed as a 30-day cure for its detoxifying properties. Round taste, cider-like, slightly caramelized.

In cooking, it replaces balsamic on roasted vegetables, in meat marinades, or as a reduction on cheese. On seared A5 Wagyu, a few drops are enough to transform the dish.

Tasting notes

Appearance: Amber brown, transparent, shiny like honey.

Nose: Notes of baked apple, honey, aged cider.

Palate: Mild acidity (pH 3.5), not aggressive. Roundness, length.

Finish: Caramelized finish. Lingers for 1 minute.
