
The Story of an Exceptional Tile
It was in the library of the Åby Family Manor in 1990 that a century-old recipe for crisp rye bread was rediscovered, marking the beginning of a unique gastronomic adventure.
Johanna von Wright, then the owner of the manor, hosted a boarding house for retired horses on the property. To finance her activities, she organized a Christmas market, during which she made these crispy tiles for the first time using the rediscovered recipe. The success was immediate, and Johanna decided to continue this artisanal production.

A Preserved Artisan Tradition
Since its beginnings, this crispy bread has conquered renowned chefs and caterers as far as Paris. Originally, the tuiles were baked in the form of large slabs, cut by hand. Today, they sport their beautiful oval shape, the result of slight adaptations, but the recipe remains faithful to its simplicity: rye flour, water, and sea salt .
Without additives, fats or artifices, these tiles require exceptional craftsmanship. The manufacturing requires more than twenty manual steps, a challenge due to the unpredictable nature of rye, which Johanna and her team master to perfection.
The sometimes capricious rye petals come out of the oven sometimes in the shape of boats, sometimes in swings – a mystery that only the team at Åby Manor knows.

Even today, these crispy tiles are handmade in Porvoo, Finland by Johanna and her team. Each petal embodies the heritage of Åby Family Manor and the passion for craftsmanship, offering an authentic and timeless taste experience.

The history of the famous organic rye crispy tile dates back to 1990, when a forgotten recipe was rediscovered in the library of the Åby Family Manor.
