Aged in oak barrels for 4 years, white balsamic vinegar is both mellow and powerful, very present on the palate but invisible to the eye. The result of a blend of white wine vinegar and white grape must, it acquires subtle and characteristic aromas throughout its aging process. It is often used in raw vegetable or fruit salads and is also very practical for preserving the color of cooked vegetables, fish, or seafood.
