The small village of Itxassou in the Basque Country is well-known to connoisseurs for its famous black cherry jam. The Itxassou beekeeper perpetuates a traditional, family-run know-how. His artisanal fruit preparations contain 80% whole fruit and are guaranteed pectin-free. They cannot officially be called jams because they contain too much fruit! To revive the natural flavors of yesteryear, they follow the peasant recipes of his "Amatxi" (Basque grandmother).
A traditional Basque shepherd's dessert, this delicacy... Whole cherries are best enjoyed with a slice of sheep's cheese. This recipe comes from a peasant recipe from my " Amatxi " (Basque grandmother).
