The result of preserved expertise and specifications even more demanding than those of the Morteau PGI , their Sausage of Morteau Label Red PGI offers a remarkable taste quality, resulting from a meat Label Red , fresh and lean, origin France County . It thus benefits from a double guarantee of quality: Label Red and Protected Geographical Indication ( PGI ). The production process relies strictly on blends of prime cuts of pork, exclusively fresh (loin, shoulder, back, belly), excluding cuts of inconsistent quality. meat comes from pigs Label Red , born and raised in Franche - Comté , from selected breeds, with a longer rearing period, low rearing density and controlled feed (minimum 65% cereals).

This requirement guarantees a meat firmer, promoting more even smoking, finer aromas, and superior flavor. Label Red requires a natural smoking process of at least 48 hours, using untreated resinous wood, carried out in a traditional tuyé (a pyramidal chimney typical of the Franche - Comté ). This process gives it an authentic and intense smoky flavor, more pronounced than that of a Morteau PGI Standard.
