On the genetic front, Maison Polmard works exclusively with exceptional Blonde d'Aquitaine heifers from Lorraine, boasting the finest grain of any French genetic heritage, selected according to strict criteria. Their feed is carefully formulated, and the animals' well-being is paramount on the farms. Finally, a very specific maturation process, known as "nacreous" (using crystallized salt), gives the meat a distinctive character, with flavors that are both intense and delicate. The result is "Haute Couture" products that bring pleasure and meaning to every bite. To preserve the quality, a unique hibernation process maintains the meat's cellular structure during freezing. The meat returns to its natural state, ensuring ideal juiciness and an unaltered flavor profile.

Instructions for use

• Décongélation : 24h au réfrigérateur dans son emballage

• Sortir 30 min avant cuisson pour tempérer

• Poêle bien chaude, 1-2 min par face pour bleu, 2-3 min saignant

• L'onglet se cuit court : surtout pas trop cuit

• Reposer 3-5 min à couvert avant trancher

• Trancher dans le sens contraire des fibres pour la tendreté

• Fleur de sel & poivre du moulin au dernier moment

• Ne jamais recongeler
