In detail:
Taggiasca olives were introduced to Liguria (near Genoa) by Benedictine monks in the 12th century, in Taggia, which gives them their current name. From this steep and windy coastal region, they derive their small size and highly sought-after delicate yet concentrated flavor. Selected and harvested by hand, they are brined and then preserved in extra virgin olive oil. They can be enjoyed as an appetizer, to flavor fish, a tomato sauce, or even a salad.
