Long description:
Kaneiwa Shoyu is a traditional soy sauce from Japan, originating from the heart of Arida, where the pure water of the Arida River meets the treasures of nature for nearly 100 years.
Made from 100% natural ingredients — soybeans, wheat, and sea salt — each batch is carefully blended and fermented using a special Koji (Aspergillus Oryzae). This unique process transforms proteins, starches, and lipids into Moromi, rich in amino acids, sugars, and fatty acids, for an unparalleled taste and aroma.
The fermentation lasts three years, in historic wooden barrels, under the expert supervision of Kurabito, who stir the sauce daily with wooden paddles. After maturation, the sauce is hand-pressed and bottled in traditional glass, thus preserving the authenticity of Japanese Shoyu.
