Picked at full ripeness, this black olive imparts its deep color and pronounced flavor through a patient brining process of several months. Greek expertise results in tender flesh with present but never aggressive tannins. Essential as an aperitif, it also enhances raw vegetables, tomato and feta salads, as well as stews and braised meats.
