In detail:
These special quality morels, calibrated from 2 to 4 cm excluding the stem, contain only whole morel caps with stems cut a maximum of 10 mm from the cap. Varieties: Morchella elata and Morchella esculenta. To rehydrate them, soak them in a container filled with equal parts warm water and milk for at least 30 minutes. Ideally, soak them the day before for consumption the next day.
