With its 500 production hives, the team at the Billard beekeeping farm has not lost its fascination with bees. After several years of amateur production, they adopted professional status in 2008 to diversify the small family grain farm, which has been in operation for four generations. Moving the hives to different locations allows them to produce about ten different honeys. The season begins with the spring honey harvest. This is followed by acacia honey, forest honey, summer wildflower honey, and then sunflower honey. The farm also manages two urban apiaries located in Chartres, one of which is on the roof of the Media Library. Quality is paramount, and they aim to offer a range of flavors as close to nature as possible, without any unwanted notes of wax or smoke.
This Honey comes from flowers of culture Spring , primarily rapeseed and fruit trees, but also blackthorn, hawthorn, dandelions, willows, and clover in varying proportions depending on the batch and the season. Its aromatic intensity is mild with a fine texture. Its floral taste may have a slight Acidity. Light, it has little persistence on the palate.
