Château de Panisse is located in the heart of Provence, the land of olive trees and olive oil, blessed with sunshine and blue skies where the mistral wind blows. This location, encompassing 15 hectares surrounding the 15th-century château, the olive varieties, and the well-ventilated groves have allowed these Fruité Vert and Noir olive oils, made from mature olives, to obtain the AOC "Olive Oil of Provence" designation. The Picholine oil, a single-varietal blend, is made entirely from Picholine olives grown in a neighboring orchard. Fruité Vert received the gold medal at the 10th National Olive Oil Competition of France (Appellation d'Origine Contrôlée) in 2013 and the silver medal at the 2018 Concours Général Agricole in Paris and New York. Noir d'Olives maturées obtained the gold medal at the Concours Général Agricole de Paris 2014 and in 2018, the gold medal at the AOC AOP oil competition in Nyons as well as a 3rd Epicure d'Or from the Fine Foods category.

" Black "d' Olive s" de Panisse is made according to a traditional Provençal recipe: a controlled fermentation of olive s allows you to obtain a oil mild with a taste similar to that of olives Black wine. Its distinctive, almost "choppy" nose is very characteristic, with powerful aromas of cocoa, mushroom, and truffle. In the kitchen: drizzle a little over ratatouille, mushrooms, aged goat cheese, or grilled prawns before serving, and as a dessert wine in quince and pear compotes, and over baked apples...
