
Tochigi's elite
Tochigi Prefecture, an hour from Tokyo, is home to the Nikko shrines and the peaks of Mount Nasu. It is also the heart of the JET program — Japanese Elite Tochigi — launched in 1971.
The JET label selects only Kuroge Washu reaching grade A5 BMS 10+. A tiny fraction of the prefecture's production.
Each carcass is individually numbered and traced back to its original farm.

Between Mount Nasu and the agricultural lands of the plain, Tochigi offers a continental climate: hot summers, cold winters, strong temperature variations.
The cattle are fed with local rice and volcanic spring water, filtered by the Nikko mountain range.
This meticulous diet creates an ultra-fine marbling, very typical — a recognizable signature of JET Wagyu.
