Hida-gyu is one of Japan's four great historic wagyu — alongside Kobe, Matsusaka, and Omi.
A tradition passed down from the mountain villages of Takayama, with official prefectural grading reserved for A4 and A5.

Herds graze at over 800m altitude. Cold nights, even in summer, slow growth — marbling develops slowly.
The crystalline water of alpine rivers, filtered by granite, irrigates the pastures.
Final feeding with local rice and mountain grains. Result: a very fine texture, diffuse marbling.
