These mini sardines are hand-selected, sorted and arranged, and steamed before being preserved in quality olive oil. They are fished at 5 am, when their stomachs are empty, to prevent their flavour from being affected. They arrive at the market at 6 am, then are gutted and canned from 7 am, for optimal freshness and flavour.
