Its crescent shape distinguishes it at first glance: the Lucques, pearl of Languedoc, is unlike any other olive. Harvested black at full ripeness and then prepared by L'Oulibo, an olive cooperative in Minervois, its fine and delicate flesh, without marked bitterness, melts in the mouth.
