A vinegar with a sparkling, fine acidity, aged like a grand cru wine. In Beaune, Jean-Luc Maldant, a sixth-generation winemaker, matures this Chardonnay grape vinegar in wood, where it gains roundness and freshness. Its controlled acidity makes it the perfect partner for emulsified sauces — béarnaise, hollandaise — as well as for deglazing poultry or dressing fresh herb salads. 35 cl bottle, case of 6.
