In detail:
Juan Arbelaez, Chef of the restaurant YaYa (meaning grandmother in Greek), among others, has selected Kalios Organic olive oil. A single-variety oil produced from traditional Koroneiki olives freshly harvested green at the very beginning of the season. With aromas of fresh herbs and a subtle peppery finish, a very low acidity level of less than 0.35%, it ranks among the grand cru olive oils. On the heights of Neochori-Ithomi, the organic olives from the Kalios family farm are grown on naturally drained limestone soil, with only the fertilizer produced by the goats and sheep that clean the fields. They are still pressed today in the village mill. This oil with an exceptional character and fruitiness is ideal for your salads, steamed vegetables, and crudités.
