In detail:
1st generation of natural and authentic stocks, a concentration of premium juices. Noble trimmings (meat, bones, carcasses/fish trimmings, vegetables) are cooked slowly at low temperatures to preserve their flavors. This produces an initial juice, which is then reduced until a concentrated, flavor-rich paste is obtained. 5% salt is added to allow for the natural preservation of the finished product. 1 x 3kg jar can be used to prepare up to 20 liters of cooking liquid, or 13 liters of sauce.
