In detail:
First generation of natural and authentic bases, premium juice concentration. Noble trimmings (meats, bones, carcasses/fish trimmings, vegetables) are cooked slowly at low temperatures to preserve their flavors. This produces a first juice which is then reduced until a concentrated, flavor-rich paste is obtained. 5% salt is added to allow for the natural preservation of the finished product. One 3kg pot can prepare up to 20 liters of cooking juice, or 13 liters of sauce.
