In detail:
Subtle on the nose, Gâtinais honey reveals a creaminess and lack of bitterness on the palate that makes it so special. Produced in the Loiret region, it has been known to gourmets since the early 19th century, quickly becoming the most consumed honey in the capital. Its particular character was conferred by "single-cut sainfoin" (or "esparcette"), a forage species that had become rare but is now being recultivated, as well as other melliferous legumes, to allow beekeepers in the region to produce this exceptional honey.
