Since 1997, Don Bocarte has been crafting exceptional culinary products entirely by hand, with meticulous care and in limited quantities, using its exclusive production methods. Tuna, anchovies, octopus, and squid of exceptional quality and beauty are caught exclusively in northern Spain, in the Bay of Biscay. The anchovy fillets, for example, come only from fish caught between March and June, when their fat content and flavor are at their peak. They are prepared using a traditional method that preserves their moisture and tenderness.
