In detail:
A premium jus, in a ready-to-heat pouch, designed by Joël Robuchon. A carefully selected aromatic garnish (72% beef), enhanced with onions, pinched in the oven to release its juices, deglazed with water and reduced several times before filtering to obtain a colored and flavorful roasted concentrate ready for use. Heat for 5 to 10 minutes in a bain-marie and shake before serving, loosening, creaming or even reducing to create a line of sauce. A 400 ml pouch can garnish approximately 40 plates.
