In detail:
This climbing bean is produced in the Tarbes region, in Bigorre. Cultivated in the traditional way, it is allowed to dry naturally on the plant and is still hand-picked. Thanks to its thin skin, cooking is faster, and water absorption is improved. The firm, whole beans swell well without bursting and are surprisingly light. Their skin blends with the flesh into a savory creaminess. These exceptional beans can be enjoyed in summer and winter, as a starter, in a salad, or as a main dish, according to your inspiration. Soak them overnight in 2.5 times their volume of cold water (which makes them double in volume). Bring to a boil in fresh water, then cook over low heat for about an hour. Salt halfway through cooking.
