In detail:
This couscous comes from the Bizerte region, between the mountains and the sea, at the tip of Africa. Thanks to less variable rainfall, this region has been growing cereals for centuries. Seniatna has selected 8 artisans there who prepare couscous exactly as they do for their families, as they learned from their mothers and grandmothers... The durum wheat semolina is lightly moistened and rolled by hand, then passed through a fine sieve, re-moistened, rolled, and mixed with fine semolina. Sifted again, the grains are steamed then slowly sun-dried... These loose grains don't stick, and this homemade semolina has a distinct wheat flavor. To be cooked with vegetables (zucchini, carrots, pumpkin), legumes (fava beans, chickpeas) and meats for a balanced meal. Nutritionally, couscous is lower in calories than bread and rich in selenium, a powerful antioxidant. Steaming is recommended, as in traditional Tunisian couscous pots.
