Manous is the tripoux of Lozère. It is made only from lamb tripe, a minced stuffing with added pieces of pork ham and a few carrots, seasoned with salt, pepper, and herbs, wrapped and tied with string. The sauce is accompanied by a lamb's foot, fried onions, and carrots.
