To enhance the salmon's quality, their team has developed a specific smoking and maturation technique, blending time-honored traditions with a quest for perfection. This involves a rigorous selection of fish and ingredients (Guérande salt and beechwood), manual processing, and no freezing throughout the entire process. The smoking and maturation are carried out according to an exclusive recipe, allowing the fish ample time to develop its full flavor.
