Fagot charentais is a lean and very lightly salted pâté, covered with thyme and pepper, with a good chew. Made from equal proportions of French pork liver, jowl, and shoulder, its flavor is very aromatic, with a herbaceous taste (fresh sage and thyme) enhanced by mignonnette pepper. Best enjoyed with a full-bodied red wine.
