Product Description
In the Veneto region, the Este family produces fine condiments in their acetaia (vinegar works), such as the iconic Aceto Sopraffino, highly prized by European courts in the 16th century. Since 1994, this company has revived the recipe of the superintendent of the House of Este, a recipe archived since the Renaissance. Using the same technique and in identical barrels, it is aged with the same temperature range. Only the finest grapes from their vineyard, those naturally suited to acetification, are used in the production of their wines. Their production and aging system is based on a perpetual reserve, called a "solera." Once a year, part of the contents of each barrel are transferred to open barrels to oxygenate. These products are free of any additives (caramel, preservatives, colorings, thickeners, etc.), resulting in unique and highly prized aromas.
