In Kagoshima prefecture, on the island of Kyushu, Yamada Suisan raises approximately 1,000 tons of eels per year across five specialized farms.

Our commitment: to offer safe and high-quality eels through farming without chemicals or antibiotics.

The eel masters

At Yamada Suisan, eel farming relies on the experience and sensitivity of true experts called "eel masters".

They observe daily how the eels swim, feed, and develop in order to detect the slightest change in their environment.

Their knowledge of the product allows them to create the ideal conditions for consistent and exceptional quality.

The water used in our farms comes from the natural springs of the mountainous Kirishima region.

This pure water, combined with modern facilities allowing precise control of water temperature and quality, creates an optimal environment for farming.

After farming, the eels are prepared in facilities adjacent to the farm.

They are carefully grilled on an 80-meter long charcoal cooking line, revealing their full natural flavor.

This Sanriku region is renowned for its exceptionally fresh seafood products.

Yamada Suisan transforms these natural resources to create products that are easy to prepare while preserving the authenticity of Japanese fish culture.

For over 40 years, Tarumizu Farm has been producing capelin (smelt fish) and now accounts for approximately 20% of the Japanese market.

Because a simple product requires perfect raw material, our experts directly select the best fish from renowned fishing regions in Iceland, Norway, and Canada.

Preserving freshness through flash freezing

Selected fish are flash-frozen to preserve their freshness, texture, and natural qualities.

They are then stored in Yamada Suisan's own cold storage facilities before processing in Kagoshima.

Each step is precisely controlled to ensure a perfect balance between quality and price.
