Product Description
Greek colonization over 25 centuries ago spread olive cultivation throughout the Mediterranean region. The Nyons terroir is the northernmost home of olive trees, sheltered from the winds by the last foothills of the Alps, with almost constant sunshine and low rainfall. Here, a unique olive variety, "La Tanche," has adapted, producing the "Black Olive of Nyons," the result of a long acclimatization process. Outside the microclimate of the Nyons region and the Baronnies, all attempts at cultivation have failed! Harvested when fully ripe, after the first frost which gives it its slightly wrinkled appearance and stops the olive's ripening by removing its water, the Tanche is black, large, and fleshy. Preserved in brine (water and 10% salt only), or processed into oil, tapenade and affinade, it offers the palate a ripe and round fruitiness, very buttery, very sweet, a nose of green apple, notes of dried fruit, fresh hazelnuts and cut hay.

Heat resistant, it can be used for finishing hot dishes, for cooking and even frying.
